Black Bean and Corn Salsa

I love fresh salsa!!   I also love my (very little) efficient food processor.  Today I made this recipe and loved it.

  • 1/2 onion

  • 1 teaspoon chopped garlic

  • 1 small jalapeno

  • 1 can of petite diced tomatoes (drained) or 2 large really red fresh tomatoes

  • 1 can of sweet corn (drained) or 2 ears of fresh sweet corn

  • 1 can of black beans drained

  • 1/3 of a lemon

  • salt

  • pepper

  • fresh chopped cilantro

  • 1 teaspoon of olive oil


Chop the onion, jalapeno, garlic, cilantro, and tomatoes mixing them together.  Add the beans, corn, salt, and pepper to the mix.  Then squeeze the lemon over top, add oil, and stir together.  Refrigerate for 1 hour to allow the flavors to mesh.  Serve with Tortilla chips.
